quietly upping health standards on cafés and later fast food without upsetting customers

why aren't most café's offering protein fluff instead of cholate pudding as an alternative dessert 
and caffe latte consisting of espresso, protein powder and milk 
these simple recipes would not be too expensive for cafés and easy and fast to prepare, 
customers would feel more satiety and possibly it would be healthy too 
there are lots mass produced desserts with proteins instead of fat and no calorie sweeteners instead of sugar 

likely there is no customer demand, but small scale efforts could be interesting

they key is offering choice that is not complicated without forcing change in customer behaviour 
a hamburger fast food restaurant changing all meat to vegan meat would loose a lot of customers and probably have to close 
hamburger fast food restaurants offering a few vegan alternatives on their menu, do sell some of those products 

cafés offering low fat, low carb, medium protein alternatives could possibly sell more cakes and lattes
